First off, you gotta get yourself some spinach. Them frozen bags work just fine. Don’t go buyin’ that fresh stuff, all expensive and whatnot. Thaw it out good, then you gotta squeeze the water out. Like, really squeeze it. I use my hands, but you can use a towel if you’re fancy. Just get all that water out, or your dip will be all watery and nobody wants that.
Ingredients you’ll need:
- One bag of frozen spinach, thawed and squeezed dry
- One block of cream cheese, the kind that comes in a brick, not that whipped stuff
- Some sour cream, a good dollop, maybe half a cup? I just eyeball it.
- A little bit of onion powder, don’t go crazy, just a sprinkle.
- Some salt, again, don’t overdo it. You can always add more later.
- Artichoke hearts, the canned kind is fine. Chop ’em up a bit. How much? I dunno, a handful or two?
- Parmesan cheese, the grated kind. Helps make it all cheesy and good. A good handful, you know?
- Scallions or green onions, whatever you call ’em. Chop them up too.
Now, you take a big bowl, see? Not too small, you gotta have room to mix everything up good. Throw in that cream cheese. Make sure it’s kinda soft, you can leave it out on the counter for a bit if it’s too hard. Then dump in the sour cream and the spinach. Mix that all together. Get in there with a spoon and mash it up good. It should start lookin’ creamy.
Next, you add the onion powder and salt. Mix it again. Then throw in them artichoke hearts and the parmesan cheese. Mix, mix, mix! You want everything to be all mixed together, you know? Nobody wants a bite of just cream cheese, that ain’t no good. Last, you add them chopped scallions and give it one last stir.
Now, you got your dip all mixed up, you gotta cook it. Preheat your oven, I set mine to 350, that’s what the recipe says. You could just heat it in a pan on the stove if you’re in a hurry, but baking it makes it all bubbly and warm. Get yourself a dish, somethin’ that can go in the oven. Don’t use plastic, y’all! Spread the dip in the dish and put it in the oven. Let it bake for, I dunno, 15, maybe 20 minutes? Just keep an eye on it. You want it to be hot and bubbly.
When it’s done, take it out and let it cool down a bit. Don’t burn your tongue, now. You can eat it with chips, crackers, vegetables, whatever you like. I like to eat it with them tortilla chips, the round ones. This spinach artichoke dip is good, real good. And it ain’t got no mayo in it, just like I promised. You and your family gonna love it, I guarantee it. It’s easy to make, even if you ain’t no fancy cook. Just follow my instructions and you’ll be fine. Now go on and make it, what are you waitin’ for?
And if you wanna make it a bit different, you can add some other stuff too. Sometimes I throw in some garlic powder, or a little bit of pepper. You can even add some shredded cheese on top before you bake it, make it extra cheesy. It’s your dip, you can do whatever you want with it. Just have fun and don’t worry too much about messin’ it up. It’ll still taste good, trust me.
