Alright, so the other day, I got this idea to make some cookies. Not just any cookies, though. I wanted to try using einkorn flour ’cause I’d heard it’s kinda cool and different. And I didn’t wanna do the usual butter-melting thing; I wanted to keep the butter kinda soft but not totally melted.

First, I grabbed a big bowl and tossed in the butter. It was already pretty soft ’cause I’d left it out for a bit. Then, I dumped in some sugar. I didn’t go crazy with the sugar, just enough to make ’em sweet, you know?

Mixed that up real good with a wooden spoon until it was all fluffy and creamy, like a cloud or something. After that, I cracked an egg in there and stirred it in. It started to look like, well, cookie dough!

Baking Time!

I scooped out little balls of dough and plopped ’em onto a baking sheet. I made sure to leave some space between ’em ’cause they spread out when they bake. Then I popped the tray into the oven, which I’d already preheated. The waiting game, which is the hardest part! I peeked through the oven window every now and then, watching ’em turn golden brown. It took about 10-12 minutes, give or take.

Once they were done, I pulled the tray out and let the cookies cool for a few minutes on the sheet before moving ’em to a wire rack to cool completely. They smelled amazing, all buttery and sweet. Of course, I snuck one while they were still a bit warm. Gotta quality-check ’em, right? They were soft, a little chewy, and just the right amount of sweet. The einkorn flour gave ’em a slightly nutty flavor, which was pretty interesting.

After they cooled down, the edges got a bit crispy, but the center was still soft. Ended up with about two dozen of these bad boys, and let me tell you, they didn’t last long in my house! All in all, it was a pretty successful baking experiment. They are so good!
