Making the Ice Cream
I mixed the heavy cream, milk, sugar, and vanilla extract in a bowl. Then, I poured the mixture into my ice cream maker and let it churn until it was thick and creamy. Once it was done, I transferred it to a container and popped it into the freezer to harden.
Baking the Cookies
While the ice cream was freezing, I creamed together the butter and sugar until it was light and fluffy. Then, I beat in the eggs one at a time, followed by the vanilla extract. In a separate bowl, I whisked together the flour, baking soda, and salt. Gradually, I added the dry ingredients to the wet ingredients, mixing until just combined. I divided the dough in half and added blue food coloring to one half and purple to the other. I swirled the two colors together, dropped spoonfuls onto a baking sheet, and baked them until the edges were golden brown.
Once the cookies were cooled and the ice cream was firm, I took two cookies, slapped a scoop of ice cream in between, and voila! Astronaut Ice Cream Sandwiches were born!
They looked pretty cool, if I do say so myself. The blue and purple cookies really did look like galaxies, and the white ice cream was like the moon in between. And the taste? Out of this world!
