Mixing everything together was super simple. I melted the coconut oil in a saucepan, then stirred in the sunflower seed butter, maple syrup, and a dash of vanilla extract. Once that was all smooth and combined, I took it off the heat and added in the dry ingredients: rolled oats, protein powder, and some shredded coconut for a little extra texture.
After I had everything mixed together, I scooped the mixture out onto a baking sheet lined with parchment paper. No need to turn on the oven, which is always a plus in my book. I pressed the cookies down a little with a fork to flatten them out, and then I popped the whole sheet into the fridge to let them set. It was a game of patience, but finally the cookies were ready to eat.
And you know what? They were actually pretty good! A little chewy, a little sweet, and definitely satisfying. Plus, no upset stomachs and no allergic reactions. That’s a win in my book!
So, yeah, it’s totally possible to make yummy desserts without dairy or nuts. It just takes a little bit of experimenting and a whole lot of taste-testing. But trust me, it’s worth it!
