Okay, so I decided to throw a graduation party for my little sister, and let me tell you, figuring out the desserts was a whole thing. I wanted to make it special, but also not spend the entire day in the kitchen.
First, I hit up the internet for some ideas. I saw a bunch of fancy stuff, but I needed something more, you know, realistic. I stumbled upon this Oreo mousse cake recipe, and it looked pretty doable. Only 16 servings though, which was not going to be enough. It got me thinking about easy-to-assemble desserts though.
- Oreo Mousse Cake: I figured it would be a hit because, who doesn’t love Oreos? But yeah, 16 servings was not going to cut it.
- Graduation Cupcakes: These seemed fun and customizable. I could use my sister’s school colors, which was a nice touch. 24 servings sounded better, but I was still worried it wouldn’t be enough.
- Instant Pot Chocolate Chip Cheesecake: Now, this one intrigued me. I love cheesecake, and the idea of making it in an Instant Pot was wild.
- No-Bake Peanut Butter Bars: Easy peasy. No-bake, peanut butter, chocolate. Done. I whipped these up pretty quick, and they were a total crowd-pleaser.
- Candy Graduation Caps: These were a bit more work, but so worth it. I melted some chocolate, grabbed some peanut butter cups, and got to assembling. They looked super cute on the dessert table.
Party Prep Chaos
So, I spent the day before the party running around like a crazy person. I made the cupcakes first and tried my best to decorate them with the school colors. They turned out alright, not perfect, but hey, I tried. The no-bake peanut butter bars were a breeze. I mixed everything, pressed it into a pan, and stuck it in the fridge. Boom, done. The candy graduation caps took some patience, but they were so cute that it was worth it.
The Instant Pot cheesecake was the real experiment. I followed the recipe, crossed my fingers, and hoped for the best. It actually turned out amazing! It was so creamy and delicious. Who knew you could make cheesecake in an Instant Pot?
Party Time!
The party was a blast. Everyone loved the desserts, especially the little graduation caps. People were taking pictures of them and everything. Even my sister, who’s not easily impressed, thought they were cool. We danced, we laughed, we ate way too much sugar.
In the end, it all worked out. I was exhausted, but it was worth it to see my sister so happy. And hey, I learned that I can make a pretty decent cheesecake in an Instant Pot. Who would have thought? I also thought to make a big collage of my sister’s photos as a gift, and she really liked it. It was way better than just buying some random thing.
Next time, though, I might just buy a cake. Or maybe I’ll just make those no-bake bars again. They were definitely the easiest and everyone loved them. Anyway if you need easy dessert ideas, I think those recipes are a good place to start!
