So, I finally got down to it. I grabbed my Instant Pot – you know, that magical cooking device that’s supposed to make life easier – and decided to give it a whirl.

First, I needed to find some recipes. I browsed through a bunch of websites and cookbooks. Honestly, it was a bit overwhelming with so many options! But I managed to narrow it down to a few that looked interesting and not too complicated. I’m no chef, you see.

Next, I got to work with the shopping. I hit up the local grocery store and picked up all the ingredients I needed: a bunch of veggies, some chicken, beef, sweet potatoes, coconut milk – you name it. The paleo diet, right? All-natural, whole foods, all that jazz.

With my ingredients ready, I started prepping. Chopped up the veggies, cubed the meat, and measured out the spices. It was a bit of a workout, I won’t lie. But hey, that’s part of the process, I guess. I put everything in the instant pot, following each recipe.

The beef and broccoli stir-fry had a nice kick to it. And the sweet potato and coconut curry was surprisingly creamy and delicious.

All in all, I’d say my paleo Instant Pot experiment was a success. It wasn’t too difficult, the food tasted pretty darn good, and I even had some leftovers for lunch tomorrow. I’m not sure I’m ready to go full-on paleo, but I’ll definitely be trying out more Instant Pot recipes in the future. Maybe next time I’ll try something with pork, or even some fish. Who knows! The possibilities seem endless with this thing.
