First, I grabbed my discard from the fridge. It was pretty cold and stiff. I let it sit on the counter for a bit to warm up. While that was happening, I got the rest of my ingredients together.
- I creamed some butter and sugar together in a bowl. I just used a fork for this ’cause I didn’t want to get the mixer dirty.
- Then, I cracked in an egg and mixed that in real good.
- Next, I added the sourdough discard, some vanilla extract, and gave it another good stir.

I popped them in the oven for about 12-15 minutes. You know they’re done when the edges are golden brown. I let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
The Result
Man, these cookies were so good! They were soft and chewy, with a slight tang from the sourdough. The blueberries were bursting with flavor in every bite. It’s a perfect way to use up that sourdough discard, and they are super tasty. These are for sure going into my regular baking rotation!
