What is a Sable Dessert? A Delicious Guide to This Classic French Pastry

Today, I tried to make some cookies, called “sable dessert.” It’s a kind of French cookie. I didn’t know what it was, so I searched online and found some interesting things.

It seems these cookies are also called “Sabl,” which means “sand” or “sandy” in French. I guess it’s because of their texture. I saw they are also known as French butter cookies or Breton biscuits. They are originally from Normandy, France. Some people say they are similar to American shortbread cookies, but the texture is different, and sometimes the way they are mixed is also not the same.

So I thought, why not give it a try? I followed the steps I found online. They talked about using a lot of butter and egg yolks, which makes them have that sandy texture.

Mixing

  • First, I got all the ingredients together. I used a lot of butter, that’s for sure! And some egg yolks, sugar, flour, and a pinch of salt.
  • Then, I mixed the butter and sugar together until it was all fluffy. This took a while, but my mixer helped a lot.
  • Next, I added the egg yolks one by one, mixing well after each one.
  • After that, I gradually added the dry ingredients – the flour and salt. I mixed it until it just came together. The instructions said not to overmix, so I was careful about that.

Chilling and Shaping

  • Once the dough was ready, I wrapped it in plastic wrap and put it in the fridge. I left it there for about an hour. They said chilling helps the dough firm up, making it easier to work with.
  • After chilling, I took the dough out and rolled it out on a floured surface. I used cookie cutters to make some fun shapes.

Baking and Enjoying

  • I placed the cut-out cookies on a baking sheet lined with parchment paper. I baked them in a preheated oven for about 12-15 minutes, until the edges were golden brown.
  • When they were done, I let them cool on a wire rack. They smelled so good!
  • Finally, I got to try them. They were so crumbly and buttery! They really did melt in my mouth, just like how people described.

It was a fun baking day. I think I did a pretty good job for my first time making sable dessert. They turned out delicious, and now I know why they are called “sandy” cookies. They really do have that kind of texture. If you like buttery, crumbly cookies, you should try making these!
