Alright, let’s talk about them crock pot recipes, the ones without all that milk and cheese stuff. My stomach ain’t what it used to be, and too much dairy just gives me a bellyache, you know? So, I figured, there gotta be other folks out there with the same problem. And even if you ain’t got a problem, sometimes it’s just good to eat a little lighter, you feel me?
We gonna make some good food, real easy-like. That’s what the crock pot is for, right? Throw stuff in, turn it on, and forget about it till supper time. No fuss, no muss. Just good, home-cooked grub.
First thing, you gotta get yourself a good crock pot. Don’t need nothin’ fancy, just one that works. Mine’s old as the hills, but it still cooks up a storm. And you gonna need some vittles. Meat, veggies, spices – the whole shebang.
- Meat: You can use chicken, beef, pork – whatever you got on hand. Just make sure it ain’t spoiled, that’s important. Chicken thighs are real good, get nice and tender in the pot. Beef, well, a pot roast is always a winner, ain’t it?
- Veggies: Now, I love me some carrots. Big ol’ carrots, sweet as candy. And potatoes, gotta have potatoes. Onions, too, they give it flavor. And don’t forget some fresh thyme, smells so good. Oh, and maybe some celery, if you like that kinda thing.
- Spices: Salt and pepper, of course. Can’t cook without salt and pepper. And I like to use a little garlic powder, gives it a kick. Sometimes, a little paprika, for color. You can use whatever you like, really. Just don’t go overboard, ain’t nobody wanna eat food that burns their mouth off.
Okay, so here’s one recipe I make all the time. It’s real simple, even a young’un could do it. We’ll call it Honey Mustard Chicken, even though there isn’t any honey in it just a little bit of sugar. Kids these days, they like fancy names.
You take some chicken thighs, bone-in or boneless, doesn’t matter. Put ’em in the crock pot. Then, you chop up some carrots and potatoes, not too small, you want ’em to hold their shape. Toss them in with the chicken. Then, you mix up your sauce. I take a little bit of mustard, a little bit of brown sugar, some vinegar – apple cider vinegar is good – and a little bit of water. Whisk it all together and pour it over the chicken and veggies. Put the lid on the crock pot, turn it on low, and let it cook for six to eight hours. You’ll know it’s done when the chicken is fall-off-the-bone tender and the veggies are soft.
See? Easy peasy. And it’s mighty tasty, too. The chicken is juicy and flavorful, the veggies are cooked just right. Serve it up with some rice or some biscuits, and you got yourself a meal fit for a king. Or a queen, or just a regular ol’ person like me.
Another good one is a beef stew. Now, a good beef stew needs time, you can’t rush it. You take some beef, cut it up into chunks. Brown it in a pan if you want, but you don’t have to. I usually don’t bother, less dishes to wash. Throw it in the crock pot. Then, you add your veggies. Carrots, potatoes, onions, celery – whatever you got. And some black pepper, gotta have lots of black pepper in a beef stew. Then, you add your liquid. I like to use beef broth, but water works just fine too. Add a bay leaf or two, for flavor. Put the lid on the crock pot and let it cook all day. Low and slow, that’s the key. Eight hours, ten hours – the longer it cooks, the better it gets.
And listen, you can get creative with it. Throw in some mushrooms, some turnips, some parsnips – whatever you like. That’s the beauty of the crock pot, you can just throw stuff in and see what happens. Most of the time, it turns out pretty good. And if it don’t, well, you just try again next time. Ain’t no shame in that.
So, there you have it. A few dairy-free crock pot recipes from an old woman who knows her way around the kitchen. No fancy ingredients, no complicated instructions. Just good, wholesome food that’ll fill your belly and warm your soul. Now go on and get cooking!
Remember, these are just ideas, you can adjust them to your liking. Add more or less of something, use different spices – it’s all up to you. The important thing is to have fun and enjoy the process. And the eating, of course. Don’t forget about the eating.
